Mushroom Ricotta Crostini
This Mushroom Ricotta Open-Faced Sandwich is really easy to make. You’ll start by sauteing mushrooms until they are golden and delicious.
Next, it’s time to assemble your hot vegetarian sandwiches. Make sure to choose a really good quality bread … it will make all the difference in the finished sandwiches.
You’ll top the bread with a generous spread of creamy ricotta cheese, followed by a sprinkle of Gruyere cheese (one of my fave cheeses!).
Bake those babies until the toppings are hot and ooey-gooey, and the bread is toasted and crunchy. Yum!

Butter Poached Lions Mane
The butter poaching does give them a luxurious texture that I have to admit, does have a shellfish taste and feel. The best part was when you would get a chunk of buttery sweet garlic and mushroom together in one bite. Delicious! I served them with a slow roasted top sirloin but I think the mushrooms would be even better served with a nice grilled strip steak or ribeye.
Potatoes Green Beans and Mushrooms
This savory mix of baby potatoes, fresh green beans, sliced mushroom, and onion are flavored with fresh thyme and garlic. Roasted veggies caramelize a bit and that brings out those pretty brown colors which are actually the natural sugars coming out.
